The chef himself carefully selects fresh local Hida ingredients for his cooking.
These dishes generously use seasonal ingredients grown with the blessings of Mt Ontake.

    We offer freshly caught, glistening char raised in the pure spring waters of Mt Ontake.
    It has no unpleasant odor and has a mild sweetness.

    Iwana trout, raised in the pure spring water of Mt Ontake, are grilled to perfection on a large grill, cooked until the bones are marrow-free and fragrant.
    This dish is soaked in Gifu sake.
