The chef himself carefully selects fresh local Hida ingredients for his cooking.
The cuisine makes generous use of seasonal ingredients grown with the bounty of Mt Ontake.

    We offer fresh, lustrous trout raised in the pure waters of Mt Ontake.
    It has no unpleasant odor and has a mild sweetness.
